Ray and I walked over to one of our favorite spots, Beast + Bottle the other night. While perusing the wine list, I saw a Rose GSM and thought how perfect! In my last review of Tarima Hill I mentioned that I would do a GSM review…and it’s Rose season, so that made this entry easy to pick, as well as our wine for the night!

First off, I just have to say that this wine is a vibrant and beautiful coral hue that I wish to be included in my wardrobe this season. It’s dry, crisp, and fresh and we were extremely happy with our decision. As the wine warmed a little it became more fragrant and special with a lovely floral nose. It’s a medium bodied wine with bright raspberry, strawberry, and mineral notes. Our server described it as, “peppery” and this was spot on. Such a great and unique characteristic. The wine really finishes with a long peppery acidity. This is definitely another Rose that will be added to the rotation at our house.

This would be perfect paired with roasted or grilled fish, shellfish, poultry, a cheese plate, or just a few friends enjoying the weather.
